While you can disconnect from Live in terms of "not being logged in" anymore, you cannot really disconnect from the LAN in terms of switching off/disabling the network card as you would do it with any computer.
If you mean disconnecting so the card disappears from your LAN, then the only option is, as already suggested several times, unplugging the LAN cable.
You don’t have to worry about your console being connected while not automatically being logged in to Live. The console "plays dead" (similar to disabling the network card) to the Internet traffic; it won’t connect to Live or so because a valid login is missing since you have to manually enter it.
